This dressing is prepared super quickly, tastes delicious and is completely oil-free. It’s ideal for sweet fans as the dressing has a pleasant sweetness instead of the usual sour taste. The dressing goes very well with all types of lettuce, especially lamb’s lettuce.

The ingredients
- Raspberry vinegar: It is sweeter and more pleasant than usual vinegar and brings a certain freshness to the salad.
- Agave syrup: Agave syrup takes away some of the acidity of the raspberry vinegar and makes the dressing pleasantly sweet. If you don’t have agave syrup on hand, you can also use maple syrup.
- Water: Water makes the dressing more fluid and less compact. However, if you like dressings a little thicker, you can reduce the amount of water.

- Oils unnecessarily increase your daily fat intake. (The guideline for fat is 30% of daily energy intake. However, according to the National Dietary Survey 2, for men it is 36% and for women it is 35% of energy intake. An oil/fat-free dressing can therefore reduce fat intake.)
- Avoiding oil and fat has positive effects for people with pre-existing health conditions such as cardiovascular disease
- In times of resource scarcity, oil can be completely dispensed with.
Preparation
- Combine raspberry vinegar, agave syrup and water with a spoon in a small bowl.
- Taste dressing with salt and pepper and add to the salad

Raspberry Vinaigrette (oil-free)
This vinaigrette brings the pleasant sweetness and freshness in addition to the usual acidity. The raspberry vinaigrette can be combined with a wide variety of salads, but especially with lamb's lettuce for a nice, fruity summer salad with berries or other fruit. The dressing is oil-free.
Ingredients
- 8 tbsp Raspberry vinegar
- 7 tbsp Agave syrup
- 2 tbsp Water
- Salt
- Pepper
Toppings as required
- Raspberries or other berries or fruit
- Oil seeds (e.g. sunflower or pumpkin seeds, pine nuts, etc.)
Instructions
- Combine raspberry vinegar, agave syrup and water with a spoon in a small bowl
- Taste dressing with salt and pepper and add to the salad
Notes
- The dressing is especially delicious with lamb’s lettuce and I like to add fruits (e.g. raspberries, strawberries, oranges, etc.)
- The amount is enough for 4 servings for a medium to large salad bowl for 4 people as a side dish or appetizer
